Tasty Tuesdays - Credit Crunch
I just love left overs from the day before.
Last night's dinner was lamb coated in a creamy creme fraiche sauce - creme fraiche, a dollop of mustard, breadcrumbs, rosemary and mint leaves. Potatoes were cooked with some cabbage, rosemary, mushrooms and a dollop of cream and some cheshire cheese.
But as usual I made too much or everything as these days food comes in packs for two to four people, and i end up making too much.
Well, the potato gratin was added with some stock for today's lunch, and I was surprised how well it turned out. I have been doing this for the past few weeks, economising due to being skint and only just returned to work. Money is tight, and making these home made soups, from left overs, or just freezing excess food in the freezer helps. I just wish supermarkets would not sell their perishables in large packs. I could not find loose kiwis this week and the range of loose potatoes are jacket (baking potatoes, or those 'New' potatoes. every other type of potato is in large packs, and its such a waste for us single folk, who has a teenager that does not eat potatoes. Considering England is one of the countries with the largest waste in food. These new superdeals and multiple packs of perishables is the main culprit to all this wastage.
